Vegan Pizza

This is my 3-cup-of-flour Vegan Pizza recipe. It takes longer to prepare
than most recipes on my channel, but its worth the extra effort: the
smell of freshly baking pizza is wonderful!

Like with most pizza you can add whatever topings you like. I do variations
with almost every pizza. If you follow the crust and sauce, the rest is
up to your imagination, but be sure to increase or decrease the oven time
depending on whether you go heavy or light on ingredients.

INGREDIENTS
3 cups whole wheat pastry flour
2 14 oz cans of diced tomatoes
2 Vegan sausages (I use LightLife)
1.5 cups water
8 mushrooms
1 head of garlic
1 bell pepper (I use Mezzetta’s Roasted Bell Pepper Strips)
2 tsp instant bread yeast
3 tsp oregano
1 tsp salt.
4 tsp honey or agave nectar
4 oz black olives (sliced)
5 oz vegan cheddar cheese

Slice the mushrooms. Peel the garlic. Slice the sausages and brown them.

*** SAUCE ***

To a saucepan add the tomatoes, garlic, salt, 2 tsp of honey or agave nectar,
and oregano. Simmer covered for 30 minutes, then use a hand-blender to
break up the remaining solids. Allow to sit covered until your pizza crust
is ready.

*** CRUST ***

To 105 degree water add yeast and 2 tsb agave nectar or honey. Stir until
yeast is disolved. Wait 5 minutes. In a large mixing bowl add
the flour and yeast mixture. Stir with a spoon, but start using your hands
to help incorporate the moisture into the flour. This should develop into
a sticky mess, but you can dust it with a bit more flour along the way.
I use disposable kitchen gloves, but in a pinch a bit of non-stick spray
will help. Give it some kneading for about 5 mins. Cover and let rest
for an hour.

Turn dough out out onto a cooking sheet lined with baking parchment. Flatten
out the dough until it is about 1/4″ thick, making a flatter zone in the center,
and providing a crust on the edge.

*** ASSEMBLY ***
Use a spoon to spread the pizza sauce over the crust. Layer the other ingredients on top.

*** COOKING ***
Place into pre-heated 405 degree oven for 25 minutes, second to top rack
position in the oven. When time is up, remove pizza from oven and let sit
on the counter for 5 minutes. Slice and serve.
